Method (Serves 6)

  1. Finely chop onion, garlic and sage and add to a bowl, chop the apricots and cranberries and add to the bowl, add all other ingredients except the stuffing crumb to the bowl, season and mix well, split the mix into six equal amounts and mould into burger shapes, put the burgers on a plate and cover with cling film, chill in the fridge for 20 minutes, remove from the fridge and coat in the stuffing crumb.
  2. Heat the grill to maximum; cook the burgers for 8-10 minutes depending on their thickness, making sure the juices run clear before serving.
  3. Cut the bun in half and lightly grill, on the bottom half put the lettuce then place the burger on the lettuce and top with the brie, bacon and cranberry mayonnaise.
