Method (Serves 4)
  1. Pre heat an oven to 180c, cut the butternut in half and remove any seeds, season and drizzle with half the olive oil, add the thyme sprigs, wrap in tin foil and roast for approximately 20-25 minutes, leave to cool.
  2. Peel and finely grate the carrot and celeriac, add to a bowl, peel and finely chop the onion and garlic and add to the bowl, add all other ingredients to a bowl, season and mix well, add the roasted butternut and mix again, split the mix into 6 equal amounts and mould into burger shapes.
  3. Heat the grill to maximum and cook the burgers for 6-8 minutes depending on thickness. Cut the bun in half and lightly grill, on the bottom half place the lettuce, then add the burger and top with the haloumi and courgettes.
