Method (Serves 6)

  1. 1. Pre heat an oven to 180c, take the pumpkin and cut into approximately 1cm pieces, place in a bowl and mix with the olive oil and rosemary, place on a baking tray and roast for approximately 15 – 20 minutes , leave to cool to room temperature
  2. 2. Finely chop the onion, garlic and beetroot and add to a bowl, add all other ingredients to the bowl, season and mix well, spilt the mix into six equal amounts and mould into burger shapes, put the burgers on a plate and cover with cling film and chill in the fridge for 20 minutes.
  3. 3. Heat the grill to maximum and cook the burgers for 8-10 minutes depending on the thickness, making sure the juices run clear before serving.
  4. 4. Cut the bun in half and lightly grill, place red onion relish on the bottom half of the bun then place the burger and top with some crumbled goats’ cheese.
