- 3 Sweet potatoes
- 1 tin Black Beans, drained
- 2 tbsp. Smooth peanut butter
- 4 cloves Garlic
- 1.5 tbsp. fresh minced Ginger
- 2 tsp. ground Cumin
- 1 tsp. smoked Spanish Paprika
- 1 tsp. ground Black pepper
- ½ tsp. ground Cardamom
- 1 Egg, beaten
- 1 tsp salt
- 1 tsp. Cayenne pepper
- 1 large Onion, finely chopped
- 1 Green pepper, finely diced
- 3 tbsp. porridge oats
Method
Method (Makes 10-12 patties)
- Peel and cook the sweet potatoes until tender and leave to cool.
- Then place them in a food processor along with the peanut butter, garlic, half of the black beans and all the spices and blitz until smooth. Place the mixture in a bowl and add the rest of the beans, onions, green pepper, egg, and porridge oats. Stir well to combine. The mixture should be very thick and not too wet; if it seems wet, add a little more oats. It should seem like a “dough.” Make 10 – 12 burger shapes.
- Heat your George Foreman Grill and then place them in batches on the grill and cook for 5-6 minutes. The outer shell should be crispy but the centre will be soft and fluffy. You can eat these as they are or place them in a soft bun with a little lettuce.
