Method (Serves 4)

  1. Cut the chicken breasts into bite sized portions, place them in a bowl and sprinkle over the spices and a pinch of salt. Stir well until all the chicken is coated.
  2. Thread the chicken and tomatoes alternately onto 4 skewers. Heat the grill to maximum temperature then cook the kebabs for 5 minutes or until the chicken is cooked through.
  3. Combine the mayonnaise, lemon zest and juice with a little black pepper.
  4. Toast the pitas on the grill then fill each pitta with the chicken and tomatoes from one skewer and some salad leaves. Drizzle with lemony mayonnaise and serve.

Tip: If cherry tomatoes aren’t your thing then try this with chunks of courgette or pepper.
